Toco Caffé is a product marketed, exclusively for Italy, by the company exhibition, Fontarnisi s.r.l. of Tagliacozzo (AQ), an Italo Brazilian family company for the promotion and affirmation of quality food products. The excellence of TOCO Caffè has matured over the centuries from the family culture, natural production and passion for this product, of the Brazilian state.

Toco Caffè is 100% Yellow Catui Arabica harvested with Pulped Natural method of guaranteed origin and quality. This type of coffee has been elected as “the best coffee in the world”. It is produced in Brazil in the region of Mantiqueira de Minas with the PGI label and guarantees the highest standards of cultivation, production and distribution.

Ours is a family-run company that has been able to interpret the role of roasting raw coffee rigorously imported from Brazil. In the production chain, the passage of roasting plays a crucial role because it substantially depends on the creation of coffee as a daily food with natural and healthy energizing value.

Coffee is not to be considered a simple tasty drink, but rather a food with a particular quality of increase of the bio-humoral substances proper to people, with enhancement of its well-being. Production then equates to a wise selection of basic products, to a loving transformation of them by cooking, to the right choice of single origin mixtures. TERRITORY AND COFFEE

 

Only the “Arabica coffee” species can receive our seal of origin and quality. The most common are Bourbon, Acaiá, Catuí, Icatu, Novo Mundo, Catucaí. The production system involves the best agronomic practices, which include methods that respect the current environmental and social legislation. Methods of manual or mechanical collection are carried out, depending on the characteristics of each property.

Natural Coffe – Traditionally known as a dry method, it is the oldest and simplest way to process coffee. This method consists of subjecting the coffee beans to natural sun-drying.

Fully Washed – This method consists in the mechanical removal of the husk and the removal of the mucilage by biological fermentation in tanks.

Pulped Natural – This method is commonly used in Brazil and consists in mechanically removing the husk and part of the mucilage, before drying it under the sun.

How to Get the Seal for Producers and Roasters

To obtain authorization to use the Mantiqueira de Minas seal of origin indication, the following requirements must be met:

Manufacturers

• The property must be included in the defined area;
• You must be associated with the entities that make up the Council of Mantiqueira: COCARIVE, COOPERRITA, COOPERVASS;
• Coffee batches must be properly prepared and stored in COCARIVE, COOPERRITA or COOPERVASS warehouses;
• Minimum quality and sensory analysis: score 83 (eighty-three) points or higher in the SCAA methodology of at least two (02) associate judges of the cooperatives associated with APROCAM.

Roasters

Product definition: roasted and/or roasted and ground coffee beans, whose raw material is proven as originating from the acquisition of green coffee with the geographical indication in the indication of origin mode.
• The producer who has received the Mantiqueira de Minas seal of origin indication must inform APROCAM of the buyer company of the lot and of the quantity sold and the location (city, state, country) of destination.
• The buyer of the sealed coffee batch, once authorized by the seller, can purchase the traceability control seals from Aprocam, which will separate the seals based on the weight of the packaging (250 g., 500 g., Etc.) Al rate of 50 kg per bag (due to weight loss during roasting).
• The seller will be responsible for supervising the batch delivery process and the use of seals on the package of roasted coffee beans and / or roasted and ground coffee.
• The use of the QR CODE on packaging allows the consumer to trace all the information relating to the batch of coffee, history, prizes, certificates, etc.
• An audit can be conducted by the regulatory committee on the quality of coffee available on the market.

The region of Mantiqueira de Minas – PGI includes 25 municipalities that form the demarcated area of the protected geographical indication. Geographical indication (PGI) is a form of protection officially established in a region that is known to have a particular product, famous for being from this place. PGI in the indication of origin mode, aims to demonstrate and guarantee that this product is part of the culture of the territory, is produced in a defined area and follows specific rules and regulations established to protect the identity of this regional heritage.
